These air fryer pork mince samosas are perfect for entertaining, with a deliciously spiced pork curry and pea filling wrapped in crispy filo pastry.
Prep time: 30 mins
Cook time: 5-7 mins

Step 1
Heat the oil in a medium frying pan and add the onion, mince and curry paste or powder. Cook for 5 minutes until the onion is soft and the mince is cooked. Season with salt and pepper, if required.
Step 2
Remove from the heat and stir through the peas and set aside.
Step 3
Take a sheet of filo pastry and lay on a chopping board. Cut into 4 strips, lengthwise. Keep the remaining pastry under a damp tea towel to prevent the pastry drying out while you work.
Step 4
Place a spoonful of pork mixture at the end of each strip. Fold a corner of the pastry across to form a triangle. Continue to fold in a triangular fashion until you reach the end of the pastry strip. Brush with water to seal the edges.
Step 5
Repeat with the remaining filo pastry and filling until you have 20-22 triangular parcels. Preheat the air fryer to 180°C.
Step 6
Spray the samosas with oil, transfer to the air fryer and cook in batches (do not overfill the basket) for 5 minutes, turn over and cook for a further 2 minutes. Repeat with the remaining samosas.
Step 7
Serve the samosas with mango chutney or a raita.
The cooking time may vary, depending on the make and model of your air fryer, so use the cooking instructions as a guide.
Alternatively, spray the samosas with oil, transfer to a foil-lined baking tray in a preheated oven at 200°C, 180°C Fan, Gas Mark 6 for 10-12 minutes.
The samosas freeze well too. To cook from frozen, preheat the air fryer to 190°C and cook for 15 minutes, turning once.
