Ingredients

500g lean pork mince (5% fat)
2 teaspoons oil
1 large onion, peeled and cut into wedges
2 tablespoons garlic paste or purée
2 teaspoons ras el hanout or Moroccan seasoning
150g frozen peppers, optional
1 x 400g can chopped tomatoes
100ml hot vegetable stock
1 x 400g can chickpeas, drained
400g potatoes, skin on and cut into small chunks
Large handful fresh baby spinach leaves

Method

Step 1

Heat the oil in a large non-stick pan over moderate heat. Add the onion and cook for 2-3 minutes. 

Step 2

Add the mince, garlic paste or purée, and ras el hanout or Moroccan seasoningCook for 6-8 minutes until the mince is coloured. 

Step 3

Add the peppers and cook for 1-2 minutes. Add the chopped tomatoes, stock, chickpeas, and potatoes. Reduce the heat, cover, and simmer gently for 10-15 minutes, or until the potatoes are cooked. 

Step 4

Remove from heat and add the spinach leaves. Cover and set aside for 2-3 minutes. 

Step 5

Stir gently and serve with warm flatbreads.
