Step 1
Heat the oil in a large non-stick pan over moderate heat. Add the onion and cook for 2-3 minutes.
Step 2
Add the mince, garlic paste or purée, and ras el hanout or Moroccan seasoning. Cook for 6-8 minutes until the mince is coloured.
Step 3
Add the peppers and cook for 1-2 minutes. Add the chopped tomatoes, stock, chickpeas, and potatoes. Reduce the heat, cover, and simmer gently for 10-15 minutes, or until the potatoes are cooked.
Step 4
Remove from heat and add the spinach leaves. Cover and set aside for 2-3 minutes.
Step 5
Stir gently and serve with warm flatbreads.
