Try this twist on the classic mac and cheese – we’re not sure you’ll ever want to go back! Made with a lean and affordable pork mince, as well as some hidden veg, this recipe is sure to be a hit with everyone.

Ingredients

500g 5% fat lean pork mince
200g macaroni or wholewheat pasta shapes
1 teaspoon oil
1 onion, peeled and finely chopped
2 teaspoons garlic paste or purée
1 red, 1 green pepper, deseeded and diced (or 150g frozen stir fry peppers)
2 teaspoons Cajun seasoning
1 teaspoon ground cinnamon, optional
1 x 400g can chopped tomatoes
1 tablespoon tomato purée
250-300ml reduced salt hot vegetable stock
50g breadcrumbs
2 tablespoons freshly chopped parsley
50g hard cheese, e.g. Cheddar, grated
2 tablespoons reduced fat soft cheese

Method

Step 1

Heat a large pan of boiling water and cook the macaroni or pasta of your choice according to the packet instructions. Drain, cool immediately, and set aside. 

Step 2

Meanwhile, heat the oil in a large non-stick pan and cook the onion for 2-3 minutesAdd the pork mince, garlic, and peppersCook for 4-6 minutes. 

Step 3

Add the Cajun seasoning and cinnamon, if usedStir gently and cook for 1-2 minutes. 

Step 4

Add the chopped tomatoes, tomato purée, and stockReduce the heat, cover and cook for 15 minutes. Season with salt and pepper, if required. 

Step 5

In a small bowl, combine the breadcrumbs, parsley, and grated cheese together. Preheat the oven to 200ºC, 180ºC Fan, Gas Mark 6. 

Step 6

Add the macaroni or pasta to the mince mixture with the soft cheese. 

Step 7

Spoon into a large ovenproof dish, sprinkle over the breadcrumb mix, and bake for 10 minutes, or until the cheese melts. 

Step 8

Serve immediately with a side salad.

To save washing up, choose a heatproof pan suitable for cooking on the hob and in the oven.
