Try this twist on the classic mac and cheese – we’re not sure you’ll ever want to go back! Made with a lean and affordable pork mince, as well as some hidden veg, this recipe is sure to be a hit with everyone.

Step 1
Heat a large pan of boiling water and cook the macaroni or pasta of your choice according to the packet instructions. Drain, cool immediately, and set aside.
Step 2
Meanwhile, heat the oil in a large non-stick pan and cook the onion for 2-3 minutes. Add the pork mince, garlic, and peppers. Cook for 4-6 minutes.
Step 3
Add the Cajun seasoning and cinnamon, if used. Stir gently and cook for 1-2 minutes.
Step 4
Add the chopped tomatoes, tomato purée, and stock. Reduce the heat, cover and cook for 15 minutes. Season with salt and pepper, if required.
Step 5
In a small bowl, combine the breadcrumbs, parsley, and grated cheese together. Preheat the oven to 200ºC, 180ºC Fan, Gas Mark 6.
Step 6
Add the macaroni or pasta to the mince mixture with the soft cheese.
Step 7
Spoon into a large ovenproof dish, sprinkle over the breadcrumb mix, and bake for 10 minutes, or until the cheese melts.
Step 8
Serve immediately with a side salad.
To save washing up, choose a heatproof pan suitable for cooking on the hob and in the oven.
