Ingredients

500g lean pork mince (5% fat)
2 teaspoons oil
2 tablespoons garlic and ginger paste or purée
1 large red pepper, deseeded and cut into small squares or cubes, or 1 large carrot, peeled and finely sliced
1 x 227g can pineapple chunks in juice, drained, reserving the juice
1 tablespoon cornflour
200ml tomato passata
2 tablespoons light soy sauce or Worcestershire sauce
2 spring onions, finely chopped

Method

Step 1

Heat the oil in a large non-stick pan over high heat. Add the mince and garlic and ginger paste or purée, and cook for 4-5 minutes, stirring occasionally until the mince is cooked. 

Step 2

Add the pepper or carrot, reduce the heat and cook for 2-3 minutes. 

Step 3

Meanwhile, mix the reserved pineapple juice with the cornflour, and add to the pan with the passata. 

Step 4

Add the pineapple cubes and light soy sauce or Worcestershire sauce. Cover, reduce the heat, and simmer for 2-3 minutes or until the sauce thickens. 

Step 5

Stir gently, then garnish with the spring onions and serve with egg fried rice or noodles.
