A flavoursome oriental-style noodle dish with pork loin medallions, combined in a quick satay sauce, that’s under 500 calories too! What’s not to love?

Step 1
In a large bowl, mix together the oil, curry powder or paste, garlic and ginger. Add the pork and coat in the marinade. Cover and set aside for a few minutes.
Step 2
To prepare the satay sauce, in a small bowl mix all the ingredients together.
Step 3
Cook the noodles according to the packet instructions, drain and set aside.
Step 4
Heat a non-stick frying pan over moderate heat. Add the pork and cook for 5 minutes, stirring occasionally. Add the vegetables, noodles and sauce.
Step 5
Reduce the heat and simmer for 3-4 minutes, stirring occasionally until the vegetables are cooked but still slightly crunchy. Season if required.
Step 6
Serve immediately.
If preferred, use whatever vegetables you have in the fridge. This recipe works with leftover noodles or rice too.
