Easy Pork Satay Noodles

A flavoursome oriental-style noodle dish with pork loin medallions, combined in a quick satay sauce, that’s under 500 calories too! What’s not to love?

Ingredients

4 pork loin medallions or 4 pork loin steaks, fat removed and cut into 1.5cm cubes
2 teaspoons oil
1 tablespoon curry powder or paste of your choice
1 teaspoon garlic purée, or 1 small garlic clove, peeled and finely crushed
1 teaspoon ginger purée, or 1 x 2.5cm piece fresh ginger, peeled and finely chopped
1 x 300-320g pack prepared stir-fry vegetables of your choice
1 x 250-300g dried egg noodles
For the satay sauce
2 tablespoons peanut butter of your choice
2 tablespoons hot water
2 teaspoons reduced-salt soy sauce

Method

Step 1

In a large bowl, mix together the oil, curry powder or paste, garlic and ginger. Add the pork and coat in the marinade. Cover and set aside for a few minutes. 

Step 2

To prepare the satay sauce, in a small bowl mix all the ingredients together. 

Step 3

Cook the noodles according to the packet instructions, drain and set aside. 

Step 4

Heat a non-stick frying pan over moderate heat. Add the pork and cook for 5 minutes, stirring occasionally. Add the vegetables, noodles and sauce. 

Step 5

Reduce the heat and simmer for 3-4 minutes, stirring occasionally until the vegetables are cooked but still slightly crunchy. Season if required. 

Step 6

Serve immediately.

Tips and Serving Suggestions

If preferred, use whatever vegetables you have in the fridge. This recipe works with leftover noodles or rice too.

Method
