Ingredients

500g 5% fat lean pork mince
2 teaspoons oil
1 onion, peeled and finely chopped
2 teaspoons garlic paste or purée
2 sweet peppers, deseeded and diced (or 150-200g frozen stir fry peppers)
1-2 tablespoons chipotle paste
2 tablespoons tomato purée
600ml hot low salt vegetable stock
200g orzo or soup pasta
Juice of ½ lemon
Large handful freshly chopped parsley
75g grated hard cheese, e.g. Parmesan

Method

Step 1

Heat the oil in a large non-stick pan over high heat. Add the mince and cook for 4-5 minutes, stirring occasionally until the mince is crispy. 

Step 2

Reduce the heat under the pan and add the onion, garlic paste or purée, and peppers. Cook for 3-4 minutes, or until the onion is soft. Add the chipotle paste and tomato purée. Stir gently until combined. Add the stock. Season with salt and pepper, if required. 

Step 3

Increase the heat and bring to boil. Add the pasta, reduce the heat, then cover and cook for 10-12 minutes or until most of the liquid is absorbed, stirring occasionally. 

Step 4

Remove the lid and stir through the lemon juiceherbs, and Parmesan.  

Step 5

Serve with salad leaves or seasonal vegetables.
