Flavourful and easy, this Pork and Chipotle Orzotto is the warm dinner you need at the end of a long day. It comes together in just 30 minutes, with minimal washing up! A dish that’ll soon be on your weekly rotation.

Step 1
Heat the oil in a large non-stick pan over high heat. Add the mince and cook for 4-5 minutes, stirring occasionally until the mince is crispy.
Step 2
Reduce the heat under the pan and add the onion, garlic paste or purée, and peppers. Cook for 3-4 minutes, or until the onion is soft. Add the chipotle paste and tomato purée. Stir gently until combined. Add the stock. Season with salt and pepper, if required.
Step 3
Increase the heat and bring to boil. Add the pasta, reduce the heat, then cover and cook for 10-12 minutes or until most of the liquid is absorbed, stirring occasionally.
Step 4
Remove the lid and stir through the lemon juice, herbs, and Parmesan.
Step 5
Serve with salad leaves or seasonal vegetables.
If preferred, use your favourite family frozen vegetables in the pasta dish.
