Ingredients

500g lean pork mince (5% fat )
1 teaspoon olive oil
1 onion, peeled and diced
1 red pepper, deseeded and diced
200g small broccoli florets
1 teaspoon ginger purée
3 garlic cloves, peeled and minced
1 tablespoon dark soy sauce
3 tablespoons hoisin sauce
250g uncooked long grain or basmati rice
1 small carrot, peeled and grated
100g cucumber, roughly chopped

Method

Step 1

Cook the rice according to the packet instructions and set aside. 

Step 2

Meanwhile, heat the oil in a non-stick pan and cook the onion for a few minutes until translucent. 

Step 3

Add the mince and cook for 3-4 minutes until brown, breaking up with a spoon. 

Step 4

Add the pepper, broccoli, ginger puréegarlic, and soy sauce. Stir fry for a few minutes, then add the hoisin sauce. Stir gently. 

Step 5

Serve the stir fry with the rice, grated carrot, and cucumber.
