Step 1
Cook the rice according to the packet instructions and set aside.
Step 2
Meanwhile, heat the oil in a non-stick pan and cook the onion for a few minutes until translucent.
Step 3
Add the mince and cook for 3-4 minutes until brown, breaking up with a spoon.
Step 4
Add the pepper, broccoli, ginger purée, garlic, and soy sauce. Stir fry for a few minutes, then add the hoisin sauce. Stir gently.
Step 5
Serve the stir fry with the rice, grated carrot, and cucumber.
