Cheesy Pork and Bean Wedges

A definite family favourite, the Cheesy Pork and Bean Wedges are a comforting weeknight dinner at the end of a tiring day. Dished up using the Everyday Pork Mince Base, this recipe uses affordable pork mince and store-cupboard favourites to create a satisfying and delicious plate!

Ingredients

300g Everyday Pork Mince Base
4 medium baking potatoes, cut into wedges
1 tablespoon oil
1-2 teaspoons smoked paprika
1 x 400g can tomato baked beans or baked beans of your choice
50g hard cheese, grated

Method

Step 1

Preheat the oven to 220°C, 200°C Fan, Gas Mark 7. 

Step 2

Spread the wedges evenly onto a non-stick baking tray, lined with baking parchment or foil. Drizzle with the oil and roast for 40-50 minutes, turning the wedges when halfway through cooking. 

Step 3

Alternatively, cook the wedges evenly in a preheated air fryer at 200°C for 10 minutes, toss gently and continue to cook for a further 5 minutes or according to your manufacturer’s handbook.

Step 4

Meanwhile, reheat the mince in a large pan with the smoked paprika and beans for 3-4 minutes until hot. 

Step 5

Remove the wedges from the oven or air fryer, spoon over the mince, and top with the grated cheeseIf preferred, melt the cheese under a preheated moderate grill and serve with salad leaves or seasonal vegetables. 

Tips and Serving Suggestions

Alternatively, for speed, replace the fresh wedges with frozen wedges and cook to your preference, according to the packet instructions. Reheat the mince and bean mix until piping hot, spoon over the wedges, sprinkle over the cheese, and heat until cheese melts before serving. The mince and bean base works well as a topping with chips too.
