Ingredients

500g lean pork mince (5% fat)
1 teaspoon oil
100g prepared stir fry vegetables
400g Japanese-style udon noodles or 1 x 300g pack straight to wok or ready to wok noodles
6 spring onions, finely chopped
2 x 120g sachets prepared Satay stir-fry sauce or any stir fry sauce of your choice

Method

Step 1

Heat the oil in a large non-stick frying pan over moderate heat until hot. Add the stir fry vegetables and cook for 1-2 minutes, stirring occasionally.  Remove from the heat and transfer to a separate bowl.

Step 2

Put the udon noodles in a large heatproof bowl or pan. Cover with boiling water and leave for 1 minute, then drain and transfer to a large bowl with the stir fry vegetables. Toss gently. 

Step 3

Return the frying pan to the hob and heat until hot. Add the mince, break up with the back of a wooden spoon or spatula, and dry fry undisturbed for 1-2 minutes. Continue to cook for 2-3 minutes, stirring occasionally until the mince is cooked and any meat juices run clear. 

Step 4

Add ¾ of the spring onions and cook until soft. Reduce the heat and add the satay sauce to the mince, then add the noodles and stir fry vegetables. 

Step 5

Stir gently and heat through for a few minutes, garnish with the remaining spring onions and serve.

Method
