Love lasagne but don’t like the faff? Our one pan lasagne with pork mince is a tasty, easy version that’ll become your new family favourite.

Ingredients

1 x 500g pack pork mince (5% fat)
2 teaspoons oil
1 small onion, peeled and finely chopped
2 garlic cloves, peeled and crushed or 2 teaspoons garlic purée
1 large carrot, peeled and grated or finely diced
2 x 400g cans chopped tomatoes
1 teaspoon dried mixed herbs or oregano (or use whatever you have in the cupboard)
100ml water
100g or 6 no-cook lasagne sheets (no pre-cooking required), each roughly broken into 3cm pieces
1 x 200g tub soft cheese (we used reduced fat)
50g grated hard cheese (we used Cheddar)

Method

Step 1

Heat the oil in a large non-stick heatproof frying pan over moderate heat and cook the onion for 1-2 minutes. 

Step 2

Add the pork mince, garlic and carrotCook for 5-8 minutes, stirring occasionally until the pork is lightly coloured. 

Step 3

Add the chopped tomatoes, herbs and water. Season. Lay the lasagne pieces evenly over the sauce, cover with a lid or tightly with foil, reduce the heat and simmer for 10 minutes. 

Step 4

Remove the lid, stir gently, cover and cook for a further 10 minutes or until the pasta is cooked.

Step 5

Uncover, fold in the soft cheese, and sprinkle over the cheeseTransfer to preheated moderate grill and heat for 2-3 minutes, or until the cheese has melted. 

Step 6

Serve with a side salad and garlic bread.
