“If you’re looking for an easy way to mix up your usual family dinners and save a bit on the food shop*, try swapping out your usual for pork mince and making this one pan pork mince fajita rice. Melt with Peppers, mixed beans and plenty of melted cheese. And because it’s mince, there’s no faffing around chopping up meat. It can go straight in the pan and start cooking. It cooks really quickly too, which is exactly what I need on a busy weeknight. It’s a great way to get a balanced, wholesome** meal on the table with protein, veg and carbs all in one pan. And pork mince is always a winner in our house.”

Ingredients

500g lean pork mince (5% fat)
1 tablespoon extra virgin olive oil
1 onion, peeled and sliced
1 red pepper, deseeded and sliced
200g closed cup mushrooms, cleaned and sliced
1 teaspoon ground cumin
1 teaspoon garlic powder
1 teaspoon onion granules
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon tomato purée
300ml reduced salt hot chicken stock
1 x 400g can mixed beans in water, drained
500g long grain rice
A handful of freshly chopped coriander
80g reduced-fat Cheddar cheese
To serve:
Freshly chopped coriander, optional

Method

Step 1

Heat the oil in a large frying pan over a medium-high heat. Add the pork mince, break it up with a wooden spoon and cook for 4-5 minutes or until brown.

Step 2

Add the onion, pepper and mushrooms to the pan. Stir-fry for 2-3 minutes until they begin to soften.

Step 3

Add the spice mix  (Ground cumin, garlic powder, onion granules, smoked paprika and dried oregano) and stir well to coat everything. Add the tomato purée and stock, then stir until well combined.

Step 4

Add the mixed beans and rice, along with the fresh coriander if using. Mix everything together, ensuring the rice is fully coated (about 15-20 minutes).

Step 5

Sprinkle over the cheese, reduce the heat to low, cover with a lid for a few minutes to allow the cheese to melt.

Step 6

Serve hot with an extra sprinkle of fresh coriander, if desired.
