“I’ll take any excuse that allows me to deconstruct a burger meal, form it into a delicious, balanced bowl, all while coming in under £6. 5% fat pork mince is one of my favourite meats, and it’s a high source of protein, so enjoying it with homemade chips, avocado, a salad, and a creamy burger sauce is my ideal dinner.”

Ingredients

500g 5% fat pork mince
2 baking potatoes, washed and sliced into fries
2 tablespoons rapeseed oil
1 teaspoon garlic granules
1 teaspoon smoked paprika
2 tablespoons mayonnaise
1.5 tablespoons tomato ketchup
1 red onion, peeled and thinly sliced
2 heads of baby gem lettuce, washed and torn
200g cherry tomatoes, sliced into quarters
1 avocado, seed removed and thinly sliced
Couple of gherkins, to garnish

Method

Step 1

Add the sliced potatoes to a bowl of cold water to rinse the excess starch off. Add into a clean towel to dry, then transfer into your air fryer basket/a baking dish, spreading into an even layer.

Step 2

Coat with rapeseed oil and season with salt and pepper. To air fry, cook at 180°C for 25-30 minutes or roast in the oven at 190°C , Gas Mark 5 for 30-40 minutes. Shake the basket/tray halfway.

Step 3

Meanwhile, to a non-stick frying pan, add the mince, garlic granules, smoked paprika and a pinch of salt and pepper. Fry for around 7-9 minutes, or until fully cooked.

Step 4

To make the burger sauce, combine the mayonnaise, ketchup, 2 tablespoons of the gherkin brine and a crack of black pepper. Taste to adjust the seasoning if necessary.

Step 5

Load up your pork mince bowl with a serving of lettuce, tomatoes, avocado, pork mince, fries and a couple of sliced gherkins. Drizzle over the burger sauce and add another crack of black pepper. Dig in!
