Pork Empanadas

These air fryer Pork Empanadas are a family favourite, filled with delicious pork mince and a hint of smoky chipotle paste.

They’re perfect for busy days, as they can be made ahead and cooked straight from frozen. A tasty and convenient snack that can be enjoyed by all!

Ingredients

250g lean pork mince (5% fat)
2 teaspoons oil
½ small onion, finely chopped
1 tablespoon chipotle paste or smoked paprika
75g frozen sweetcorn or mixed vegetables
3 tablespoons prepared tomato salsa
Flour, for dusting
2 x 320g ready-rolled shortcrust pastry
1 egg, beaten
Spray oil

Method

Step 1

Heat the oil in a large non-stick frying pan over moderate heat. Add the pork, onion and chipotle paste or smoked paprika, stir gently and cook for 5-8 minutes or until the mince is brown. Add the sweetcorn and salsa, season with salt and pepper to taste, if required. Remove from the heat and set aside to cool for 10 minutes. 

Step 2

To prepare the pastry, on a lightly floured surface cut 18-20 x 10 cm thin discs from each pastry sheet, re-roll as needed. 

Step 3

Spoon 1-2 tablespoons of the pork mix in the centre of each disc. Fold the pastry over to make a pasty shape. 

Step 4

Seal the edges with a fork and brush the pastry all over with the beaten egg. Preheat the air fryer to 200°C for a few minutes, then spray the air fryer trivet with oil. 

Step 5

Position the empanadas evenly on the trivet and cook in batches for 10 minutes, turning once. Do not overfill the air fryer basket. 

Step 6

Remove the empanadas from the air fryer and allow to rest for a few minutes before serving with a crisp salad and a dip of your choice. 

Tips and Serving Suggestions

The premade empanadas freeze well for reheating as a snack in the air fryer. To freeze, lay each empanada onto a lined baking tray, cover and freeze (this method stops them from sticking together). When frozen, transfer to a plastic freezer bag, label and return to the freezer. They will freeze well for up to 2-3 months. 

When ready to cook from frozen, preheat the air fryer to 200°C for a few minutes and cook the empanadas for 15 minutes before serving cooking too. the cooked empanadas on a baking sheet lined with  

Alternatively, bake in a preheated oven at 180°C, 160°C Fan, Gas Mark 4 on a baking tray lined with foil or baking parchment for 20 minutes.   

Alternatively, combine any remaining filing with cooked pasta and serve.
