Mexican-Style Pork Burger with Avocado and Tomato Salsa

A stunning pork mince burger flavoured with Mexican taco seasoning and served with an avocado and tomato salsa.

Ingredients

For the burgers
1 x 500g pack pork mince
2 spring onions, finely chopped
2 tablespoons prepared Taco or fajitas seasoning
For the avocado and tomato salsa
1 small, ripe avocado, stoned and finely chopped
3 small tomatoes, deseeded and finely chopped
½ cucumber, deseeded and finely chopped
Juice of 1 lemon or lime
2 teaspoons oil
4 burger buns
Salad leaves, to garnish

Method

Step 1

Put the burger ingredients into a large bowl, season and gently mix.

Step 2

Using slightly damp hands shape the mixture into 4 x 9cm burgers. Cover and chill in the fridge for 20 minutes.

Step 3

To prepare the salsa, mix all the ingredients together, season and set aside.

Step 4

Cook the burgers on a prepared barbecue or preheated moderate grill for 6-8 minutes on each side until cooked and any meat juices run clear.

Step 5

Serve the burgers with tortilla chips and the salsa.

Tips and Serving Suggestions

As an alternative, shape with mince mixture into mini meatballs or koftas, slide onto small metal skewers, then cook as required and serve.

If preferred, use 5% pork mince and add a whole egg yolk to bind the burger mix.
