Beth’s Pork Mince Fajita Rice Melt

Cooking Skill: Not Too Tricky
Step 1
Heat the oil in a frying pan over a medium-high heat and add the onion and garlic, fry for around 4-5 minutes stirring continuously until soft.
Step 2
Add the pork mince , paprika and oregano. Break up the mince using a wooden spoon or meat masher and fry for a few minutes until brown, stirring regularly.
Step 3
Add the sun-dried tomatoes to the pan and mix well. Pour in the orzo, give it a good stir so it’s mixed in with the pork mixture, then gradually add half the stock.
Step 4
Bring to a gentle simmer and stir regularly as the orzo absorbs the liquid (as you would a risotto) then add the rest of the stock. Orzo cooks much faster than risotto rice so it only takes around 10 minutes to cook through and absorb the liquid.
Step 5
Stir in the pork, créme fraîche, cheese and spinach leaves. Mix well, cover and set aside for 1-2 minutes for the spinach to wilt then serve.
