If you can’t get enough Mexican flavours, this pork mince burrito-inspired bowl with wholegrain rice, sweetcorn, avocado, spinach leaves and tomatoes, drizzled with a yogurt will hit the spot and only 20 minutes to cook too.

Ingredients

For the Mexican-style pork:
90g lean British pork mince (5% fat)
1 teaspoon rapeseed oil
¼ teaspoon smoked paprika
¼ teaspoon ground cumin
¼ teaspoon chilli powder
Juice of ¼ lime
For the bowl:
100g cooked brown or wholegrain rice
70g sweetcorn kernels
60g avocado, sliced
25g baby spinach leaves
45g cherry tomatoes, halved
For the dressing:
3 tablespoons 0% fat Greek yogurt
Juice of ½ lime
To serve:
1 teaspoon freshly chopped coriander leaves
¼ lime wedge

Method

Step 1

Heat the oil in a non-stick frying pan over moderate heat until hot.  

Step 2

Add the pork mince, seasoning and lime juice. 

Step 3

Stir-fry for 5-7 minutes until the meat is browned and cooked through. Set aside and keep warm.

Step 4

Build your bowl with the rice, vegetables and cooked mince.  

Step 5

For the dressing, mix the yogurt and the juice of ½ lime in a small bowl. Drizzle over the dish.

Step 6

Finish with a sprinkle of coriander leaves and squeeze of lime.
