One Pot Pork Pasta

This pork mince dish with rainbow vegetables and rice, and drizzled with a tangy soy dressing, is packed with flavour and ready in under 30 minutes.

Cook time: 10 mins

Cooking Skill: Easy
Step 1
Heat a large non-stick frying pan over moderate heat and dry fry the mince for 3-4 minutes until brown stirring frequently. Add the garlic/ginger paste and soy sauce. Cook for 3-4 minutes until the mince is crispy.
Step 2
Meanwhile, cook the rice according to the packet instructions.
Step 3
Divide the rice between two shallow bowls, arrange the vegetables and crispy pork.
Step 4
Heat the remaining oil in the pan and fry the eggs for 3-4 minutes, if used.
Step 5
Meanwhile, prepare the dressing; in a small bowl whisk all the ingredients together. Drizzle the dressing over the salad and top with the fried egg, if used.
Step 6
Serve immediately.
If preferred, omit the eggs and mix and match vegetables of your choice, or use your family favourites. For extra value, use conventional rice and cook according to the packet instructions. If ginger and garlic paste not available, opt for freshly chopped garlic and ginger.
You could also swap the soy sauce in the dressing for sweet chilli sauce.
