One Pork Mince Pasta Bake

Full of flavour and incredibly versatile these koftas are made with British pork mince. Great value, and on the table in under 30 minutes – delicious!

Step 1
In a large shallow bowl, put the mince, garlic, oregano, paprika and the lemon zest and half the lemon juice. Season, if required and gently mix to combine.
Step 2
Using slightly damp hands, divide the mixture into 16-18 small meatballs and Mould or shape 3 meatballs onto around 6-8 short metal or wooden skewers (soaked in water for up to 20 minutes)
Step 3
Heat the oil in a large non-stick pan over medium heat. Add kebabs and cook for 8-10 minutes, turning occasionally until the kebabs are brown all over and any meat juices run clear. Alternatively, cooked under a preheated moderate grill for 8-10 minutes, turning once or on a prepared BBQ.
Step 4
While the skewers are cooking, in a medium bowl mix the tomato and onion together with the remaining lemon juice, season and set aside.
Step 5
To assemble, spread a spoonful of the tzatziki over each pitta. Top with a handful of salad leaves over each pitta. Add a pork skewer, then garnish the tomato and onion mix.
Step 6
Sprinkle the parsley over each pitta and serve with the rainbow vegetables (for the children) and a side salad (for the adults).
