

Stir Fry Soy And Honey Pork With Broccoli, Chilli, Lemon And Goats’ Cheese

Ingredients
- 200g pork tenderloin, sliced
- 1 tablespoon olive oil
- 1 small onion, finely sliced
- 2 garlic cloves, peeled and finely chopped
- 2 tablespoons soy sauce
- 1 tablespoon runny honey
- Zest and juice of 1 lime
For the broccoli with chilli, lemon and goats’ cheese:
- Large handful purple sprouting broccoli, cut into florets
- 55g Hard goats’ cheese, grated
- Zest of 1 lemon
- ½ teaspoon dried chilli flakes

For the soy and honey pork, heat the olive oil in a frying pan and cook the onion for 2-3 minutes, until soft. Add the garlic and fry for one minute, add pork and stir-fry until golden brown all over.

Drizzle over the soy sauce, honey, lime zest and juice plus a splash of boiling water and cook for 1-2 minutes or until the pork is cooked through. Set aside.

For the broccoli, place the broccoli into a pan of boiling salted water and cook for 3-4 minutes or until tender. Drain well and stir into the pan with the pork, then add the grated goats’ cheese, lemon zest and chilli flakes. Season to taste.

Pile the stir-fried pork and broccoli on to a serving plate and serve.
