Step 1
Heat a large non-stick griddle pan over medium heat.
Step 2
In a small bowl, mix the cheeses together. Lay the bread slices onto a chopping board. Divide the pulled pork equally over each bread slice, top with the cheese and sandwich together.
Step 3
Meanwhile, butter the top of each sandwich and place in the griddle pan, buttered side down. Reduce the heat and cook for 3-4 minutes on each side, pressing down gently with a fish slice or spatula until the pork is hot, the cheese melts and the sandwich is golden and crisp on the outside.
Step 4
Cut in half and serve immediately with a side salad.
