Pork Smashburger Tacos

A viral sensation but we use pork mince for a flavour-packed mash-up with herbs, cheese and mini tortillas, served with a crunchy apple slaw for an easy dinner option.

Ingredients

200g British 5% fat lean pork mince
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon garlic granules
8 small flour tortillas
2 teaspoons oil, or spray oil, for frying
8 smoked cheese slices, or 100g grated cheese, to serve
For the apple slaw:
1 apple, cored, deseeded and grated
¼ white or red cabbage, finely shredded
3 spring onions, finely sliced
3 tablespoons light mayonnaise
1-2 teaspoons chipotle chili paste
Juice of ½ lime

Method

Step 1

Place all the slaw ingredients into a bowl, season, mix well and set aside.

Step 2

For the smashburgers, put the pork mince into a bowl, add the spices and garlic granules and mix well. Divide the mixture into 8 evensized balls. 

Step 3

Add the oil to a large skillet or non stick frying pan over a high heat.

Step 4

Working one or two at a time, lay the tortillas on a clean work surface  and flatten one ball of mince onto each one, using your hand or the bottom of a saucepan. This will spread the mince evenly over each taco. 

Step 5

Place the tortillas meat side down into the hot pan and cook for 23 minutes before flipping over. 

Step 6

Add the cheese slice on top and cover with a lid for 30 seconds, or to allow the cheese to melt. Alternatively, top with grated cheese after cooking the tacos.

Step 7

Serve your smashburger tacos immediately with the slaw.

Tips and Serving Suggestions

If preferred, swap the apple slaw for traditional coleslaw or a salad garnish such as chopped cucumbers and tomatoes or other relishes.
