Lightly-spiced pork fillet with a courgette and pasta salad- delightful!

Ingredients

450g pork fillet or pork loin medallions
For the Piri-Piri Spice Mix
½ teaspoon ground cinnamon
Pinch salt
½ teaspoon ground ginger
2 teaspoons ground paprika
2 teaspoon cayenne pepper
1 teaspoon dried chilli flakes
½ teaspoon garlic powder
2 teaspoon dried oregano
For the Courgette and Pasta Salad
250g courgette, spiralised
100g green pea pasta, cooked and cooled
½ small red onion, peeled and diced
75g cherry or plum tomatoes, halved
Large handful freshly chopped mint
For the Dressing
Zest and juice of 1 lime
2 tablespoons sweet chilli sauce
To Garnish
1 tablespoon freshly chopped parsley
Freshly chopped red chillies

Method

Step 1

For the Spice mix:

Mix all the ingredients together and set aside.

Step 2

For the Pork:

Dust the pork in the spice mix

Step 3

For the Dressing:

Mix the dressing ingredients together.

Step 4

For the Salad:

Mix the salad ingredients together, pour over the dressing and set aside.

Step 5

To assemble:

Cook the pork on a hot griddle or under a grill according to your preference or until the meat juices run clear. Rest, slice and serve with the salad.

Tips and Serving Suggestions

Cooking Times:

Pork Fillet: 10-12 minutes turning occasionally, 3 minutes in oven at 170°C, 3 minutes resting time. Internal Core temperature: 70°C or above.

Pork Loin Medallions: 5-6 minutes on each side, 3 minutes in oven at 170°C, 3 minutes resting time. Internal Core temperature: 70°C or above.
