These Greek-Style Pork Gyros Bowls need to get into your rotation. They’re bright, refreshing and so, so flavourful. Plus, they’re high in lean protein thanks to the affordable and delicious pork loin steaks. The pork steaks are great value,  leaving budget for a salad, a carb, cheese and a dip – everything you need in a deconstructed gyros bowl. This recipe only takes 15 minutes from start to finish, you need to try it out, hope you love it!

Ingredients

600g lean pork loin steaks, trimmed of fat
4 teaspoons olive oil
1 teaspoon garlic granules
2 teaspoons dried oregano
6 salad tomatoes, sliced into wedges
1 cucumber, halved and thinly sliced
1 red pepper, deseeded and cut into squares
1/2 red onion, thinly sliced
4 flatbreads, toasted
200g fat-free Greek yogurt
50g Greek style cheese, crumbled

Method

Step 1

Place the pork steaks in a bowl. Coat in 1 teaspoon olive oil, 1 teaspoon garlic granules, 1 teaspoon oregano and a pinch of salt and pepper.

Step 2

Add the tomatoes, cucumber, red onion, 1 teaspoon oregano and 1 tablespoon olive oil to a bowl. Season and stir to combine to make the Greek salad.

Step 3

Place a griddle pan over a medium-high heat until hot, then place the pork steaks and pepper into the pan.

Step 4

Fry for 4 minutes, then rotate and cook for a further 2 minutes. Remove from the pan to rest whilst you plate up.

Step 5

Toast your flatbreads then add to your bowls. Add a serving of Greek salad and a dollop of yogurt. Slice the pork into strips and add to the bowl with the pepper. Finish with a crumble of Greek-style cheese and an extra sprinkle of oregano. Enjoy!

Store any cooked leftover pork in an airtight container and store in the fridge for up to 2 days.

Method
