  • 2-3 cooked gammon slices
  • 2 teaspoons butter, margarine or low fat spread
  • 2 slices granary or sourdough bread
  • 1-2 tablespoons cranberry sauce or onion chutney
  • 45g Brie, good quality Cheddar, or a cheese of your choice, sliced
  • Caper berries or olives, to serve

Heat the butter in a large non-stick or griddle pan over a moderate heat. When the butter starts to foam, add the bread slices and cook for 3-4 minutes on one side.

Transfer to a chopping board, buttery side upright.  Start to build one of the bread slices with the cranberry sauce or chutney, gammon and cheese.

Top with the remaining bread slice, buttered side on top of the cheese.

Return the toastie to the hot pan and toast for a few minutes until the cheese melts.

Serve immediately with the caper berries or olives.      .
