Cajun Pork Fillet With Sweet Potatoes
- 1x 450g lean pork fillet
- 2 tablespoons Cajun spice mix
- 900g sweet potatoes, peeled and cubed
- 2 spring onions chopped
- 2 tablespoons low fat fromage frais
- 1x 432g can pineapple rings in natural juice drained
- 1 teaspoon runny honey
- Black pepper
Preheat oven to 180°C, 160°C fan, Gas Mark 4. Place the fillet on a baking tray. Sprinkle over the Cajun spice mix and rub all over the fillet. Cook in the oven for 25-30 minutes.
Meanwhile boil the potatoes in a large pan of water for 10-15 minutes until softened. Drain and mash then stir through the spring onions, and low-fat fromage frais. Season well with black pepper.
During the last 15 minutes of cooking time place pineapple rings onto a baking tray and drizzle over the honey. Place on the baking tray alongside pork fillet and cook for remaining 15 minutes of cooking time.
Cut the pork fillet cut into slices and some with the sweet potato mash, roasted pineapple and extra steamed green vegetables.
