Bacon and Chocolate Bites
Not too tricky
- 500g (1lb) Streaky bacon
- 225g (8oz) Butter
- 225g (8oz) White sugar
- 225g (8oz) Brown sugar
- 225g (8oz) Dark chocolate, broken into pieces
- 4 Eggs, beaten
- 225g (8oz) Plain flour
Preheat the oven to Gas Mark 3, 170°C. Grease and line a small roasting tin or rectangular baking tin 28cm x 18cm approx. (11”x 7”).
Grill the bacon until cooked and then set aside to cool. When cool cut into small pieces with a pair of scissors. Meanwhile, melt the butter and two types of sugar together over a medium heat. Add the chocolate and stir until melted. Once the chocolate has melted add the beaten egg to the mixture.
Finally add the flour and bacon and mix thoroughly.
Pour the mixture into the prepared tin and bake for about 25 minutes, until the surface is set and a skewer inserted into the mixture is just slightly sticky.
Allow to cool a little before removing from the tin to a cooling rack. Once cool cut into squares and enjoy!
