Ingredients

2 lean pork loin medallions or leg pork steaks, trimmed of fat
2 garlic cloves, crushed
2cm piece fresh root ginger, peeled and grated
1 tablespoon reduced salt soy sauce
1 tablespoon runny honey
For the noodle salad
100g fresh egg pork noodles
½ red pepper, deseeded and sliced
75g beansprouts, rinsed
2 spring onions, sliced
1 head pak choi, sliced

Method

Step 1

Place the pork steaks, in a shallow dish and add the garlic, ginger, soy sauce and honey. Mix well, cover and refrigerate for 1-2 hours, if time allows.

Step 2

Cook the egg noodles according to the packet instructions, run under cold water to cool  Transfer to a medium bowl and add the beansprouts, spring onions, pak choi and red pepper.

Step 3

Dry fry the pork steaks in a preheated griddle pan for 6-8 minutes on each side.  Alternatively, cook under a preheated moderate grill.

Step 4

Serve the steaks with the noodle salad, drizzled with the pork meat juices from the pan.
