Ingredients

500g lean pork mince (5% fat)
2 large, sweet potatoes, peeled and chopped
2 tablespoons Greek yogurt or milk
1 tablespoon olive oil
1 onion, peeled and diced
2 garlic cloves, peeled and minced
2 carrots, peeled and diced
2 tablespoons tomato purée
1 teaspoon dried thyme or mixed herbs
250ml hot low salt chicken stock
140g frozen peas or mixed vegetables
Freshly chopped chives, to garnish, optional

Method

Step 1

Cook the potatoes in a large pan of boiling water for 15-20 minutes until soft. Drain and mash with the yogurt or milk. Season with salt and pepper. 

Step 2

Heat the oil in a large non-stick frying pan and cook the onion and garlic until soft. Add the pork mince, carrots, tomato purée, herbs, and stock. Simmer for 10 minutes. Preheat the oven to 200ºC, 180ºC, Fan, Gas Mark 6. 

Step 3

Stir in the peas and season to taste. 

Step 4

Spoon the mince mixture into a large ovenproof dish, top with the sweet potato mash, and bake for 15-20 minutes. 

Step 5

Garnish with freshly chopped chives (optional) and serve with seasonal vegetables.

Method

Step 1
