Mexican Pork Enchiladas

A classic dish made for sharing.  Tortillas encase a tasty Mexican spiced pork mince, tomato and black bean sauce, topped with creamy grated cheese.

Ingredients

1 x 500g pack pork mince (5% fat)
1 teaspoon oil
1 large onion, peeled and finely chopped
1 tablespoon fajitas or Mexican seasoning
150g frozen sliced mixed peppers or 1 large fresh pepper, deseeded and sliced
100g frozen sweetcorn
1 x 500ml carton tomato passata
1 x 400g can black or kidney beans, drained
8 medium tortilla wraps of your choice
150g grated hard cheese or your choice (we used Cheddar)
2 tablespoons freshly chopped parsley or coriander, optional

Method

Step 1

Heat the oil in a large lidded non-stick pan. Cook the onions for 4-5 minutes. 

Step 2

Add the fajitas or Mexican seasoning, stir and cook for a further minute. 

Step 3

Add the pork, increase the heat and cook for 6-8 minutes, stirring occasionally, or until the mince is brown. 

Step 4

Add the peppers, sweetcorn and half the passata. Cover and cook for 10 minutes. Add the beans and stir through. 

Step 5

Lay out a wrap on a chopping board. Add a generous spoonful of the pork mixture down the centre of the wrap and roll up. Transfer to a large non-stick or greased ovenproof baking dish. Repeat with the remaining wraps and filling. 

Step 6

Preheat the oven to 170°C Fan, 190°C, Gas Mark 5. Spoon the remaining passata over the wraps and top with the cheese. Bake for 5-10 minutes. 

Step 7

Garnish with the herbs, if used and serve with a green salad.
