Leftover Pulled Pork Hash With Cabbage
- Left over pulled pork (see pulled pork recipes for details of how to cook)
- Shredded cabbage
For pulled pork hash, peel some potatoes and cut into small cubes then cook in boiling water for 4-5 minutes, or until just tender.
Meanwhile heat a little oil in a frying pan and cook some chopped onion for 3-4 minutes until softened.
Drain the potatoes and add to the pan, cook until lightly browned, then stir in some shredded cooked cabbage and pulled pork.
Season and cook until all the ingredients are browned and the pork heated through.
This dish is delicious served with a poached or fried egg and a generous dollop of barbecue sauce.
Pulled pork is ideal for a lazy Sunday feast, but if you have any leftovers they’re great for simple and delicious family meals during the week too. Make sure you keep the leftover pulled pork in a sealed container in the fridge.
