Our tasty loin steak pork protein bowls are a speedy one-pan, great value, meal option with Mexican-inspired flavours and perfect for a speedy dinner or lunch.

Ingredients

4 lean British pork loin steaks, fat removed
1 x 340g can sweetcorn in water, drained 
Pinch dried chilli flakes or 1 red chilli, deseeded and finely chopped 
1 teaspoon rapeseed oil 
3 teaspoons fajita or Mexican seasoning
2 x 250g packs microwave wholegrain or brown rice
3 medium tomatoes, diced
1 x 400g can mixed bean salad in water, drained
1 large bunch fresh coriander leaves, finely chopped
1 lime, finely grated zest and juice, separated
120g 0% fat Greek yogurt 
1 x 200g pack baby spinach leaves, rinsed

Method

Step 1

In a small bowl, mix the lime zest, half the lime juice and yogurt together then set aside.  

Step 2

Put the sweetcorn in a large hot frying pan and char until slightly caramelised. Remove from the pan and stir through the chilli. 

Step 3

Wipe the pan clean. Brush pork loin steaks with ½ teaspoon of the oil and sprinkle over 2 teaspoons of the fajita seasoning. 

Step 4

Heat the same frying pan until hot and cook the steaks for 2 minutes on each side. Remove and rest for 1-2 minutes then slice. 

Step 5

Add the remaining oil to the pan, add the rice, beans and the remaining fajitas seasoning. Stir fry for 1-2 minutes. Take off the heat and add the tomatoes, half the coriander and the remaining lime juice to combine. 

Step 6

Arrange the pork, spinach leaves, charred sweetcorn, rice and yogurt in a bowl and serve. 

Tips and Serving Suggestions

Alternatively, replace the microwave rice with 300g brown or wholegrain rice, cooked.

Method
