Cajun Pork Fillet Traybake with Vegetables

A fail-safe all-in-one midweek roast using lean pork fillet, a combination of Cajun spices and the addition of colourful veggies, with minimum washing up required!

Ingredients

1 x 450g lean pork fillet, trimmed
2 tablespoons Cajun seasoning or similar
3 teaspoons oil
2 teaspoons garlic purée, or 1 large garlic clove, peeled and finely chopped
2 teaspoons runny honey
500g small potatoes, unpeeled and cut into small dice
1 large red pepper, cored, deseeded and cut into small dice
1 onion, peeled and cut into wedges
100g green beans, topped, tailed and cut in half
1 tablespoon freshly chopped parsley

Method

Step 1

Preheat the oven to 200°C, 180°C fan, gas mark 6. 

Step 2

In a small bowl, mix the Cajun spice mix, oil, garlic and honey together. 

Step 3

Put all the vegetables except the green beans on the base of a large non-stick roasting tray lined with baking parchment or foil. Add half the Cajun mix to the vegetables and gently toss together until all the vegetables are coated in the spices.  

Step 4

Place the fillet on top of the vegetables, season with black pepper and coat all over with the remaining Cajun mix. Transfer to the oven and cook for 15 minutes. 

Step 5

Remove the tray from the oven and gently turn the vegetables with a large spoon, then add the green beansReturn to the oven and continue to cook for a further 10-15 minutes. 

Step 6

Remove from the oven and leave to rest for 5 minutes. 

Step 7

Garnish with the parsley, slice the fillet and serve with seasonal vegetables.  

Tips and Serving Suggestions

If preferred, replace the peppers with 500g cauliflower florets or sweet potatoes.

Method
