Bacon Roast With Root Vegetables
- 900g premium bacon joint
For the Glazes
- 1-2 tablespoons runny honey
- Or 1 tablespoon orange marmalade and 1 tablespoon mustard
- Or 1 tablespoon favourite jam or jelly (redcurrant, plum, quince, etc)
For the roasted vegetables
- Selection of roasted vegetables.
Preheat the oven to 180ºC, 160ºC Fan, Gas Mark 4.
Place the joint onto a foil lined roasting pan, add a small cup of water and lightly scrunch the foil around the joint ( this will create a little steam during cooking and keep the joint moist). Cook for 20 minutes per 450g. during the last 20 minutes of cooking open for the foil parcel and brush now with the glaze (if you are using one).
Place the vegetables of your choice in a separate roasting pan, drizzle with a little olive oil, season and roast for 40-50 minutes (for example, potatoes, baby carrots, parsnips, shallots, sweet potatoes, squash, apples or plums).
Serve the joint with the roasted vegetables.
