Keith is about as experienced as you get in butchery - his family has been in the trade for over a century and Keith himself is a fourth generation master butcher.
He was first taught at a time when butchers did everything, from buying the live pigs to selling fresh cuts in their shop. Being the butchery and product development manager for BPEX, Keith is responsible for developing many of the modern butchery techniques and cuts of pork now seen in retailers. Also he is a strong advocate of knowing where pork originates from, along with knowing it has been produced to welfare and quality assured standards.
