We know at Love Pork how difficult it can be to think of tasty yet healthy meals to cook quickly during the week. So Lucy has shared one of her favourite recipes, tangy tacos using lean and tender pork medallions, to help her friend Cecilia spice up her family’s midweek meals menu.

Lucy: “At the moment, I’m loving pork medallions; a relatively new cut I have seen on shop shelves.”

Lucy’s healthy eating habit is helped by staying organised and planned. “I find that meal planning helps me eat better. Being super busy also means that planning is hugely important, so at the beginning of the week I try to get all the main ingredients I will need. Staple foods I tend to buy are lots of greens and protein rich foods.”

Lucy and personal trainer Cecilia struck a strong friendship early on. Cecilia helped Lucy – who is known for her appearances on The Only Way is Essex and Bear Grylls’ Celebrity Island – as she was unhappy with her body. Within weeks Lucy had caught the fitness bug and now runs a successful online fitness and nutrition platform ‘Results with Lucy’, with Cecilia as her business partner. They aim to help women achieve fitness goals. Both Lucy and Cecilia are very popular on social media channels such as Instagram, sharing workouts and healthy food ideas.
