100g (4oz) Lean quality cooked ham, wafer thin sliced
3 Chunky pork and chilli sausages, cooked and sliced
2 Fresh peaches or nectarines, sliced into 4 and stones removed
15mlsp (1tbsp) Soft dark brown sugar
15mlsp (1tbsp) Oil
Pinch dried ginger
1 Small bloomer loaf or 4 small ciabatta style rolls
Handful rocket leaves
Handful fresh basil leaves
50g (2oz) Brie or similar sliced
Olive oil to drizzle
Place peach slices into a food bag with sugar, oil and ginger. Seal bag and then toss ingredients together to coat well.
Empty into a non-stick frying pan and cook until peaches start to brown and soften slightly. Allow to cool slightly.
Take bloomer loaf or rolls, cut a circle in the top, take out and reserve. Pull out the ‘fluffy’ bread from the centre, but leave a layer next to the crust.
Now layer the ingredients into the loaf, starting with ham, then rocket and basil, followed by cheese, peaches and sausage. Season, drizzle with a little oil and finish with green leaves. Replace the lid and wrap in cling film. Place in the fridge until required.
Serve cut into large chunky wedges
