Sausages with Tomato Relish

Recipe ingredients

15g butter
1 small onion chopped
1 English eating apple cored and finely chopped
3 tomatoes skinned and chopped
1 tbsp red wine vinegar
1 tbsp Worcestershire sauce
2 tsp sugar
salt and freshly ground black pepper
8 sausages e.g. Newmarket
granary bread to serve

Preparation

Melt the butter in a small saucepan and fry the onion for 3 to 4 minutes
Add the remaining relish ingredients and cook gently for 10 minutes, stirring occasionally
Meanwhile, place the sausages under a preheated grill for 10 to 15 minutes turning occasionally until cooked throughout
Serve with the tomato relish
