BBQ’ed Pork Joint

Recipe ingredients
2lb Joint of either pork should, belly, collar or leg joint
Beer, sage and Honey Marinade
300ml (1/2pt) blonde light beer (or any liquid of your choosing)
10ml (2tsp) fresh sage, roughly chopped
2 cloves garlic squashed and 15ml (1tbsp) Honey
Preparation
If it’s rolled cut the strings and unroll
until flat. When unrolled, if the joint is thicker than
3-4cm, slice into the meat and open up so that it
can be flattened out even more. Using 4-5 long metal skewers thread through meat. This will aid heat transfer and make it easier to turn.
Place meat in a shallow dish and pour the marinade all over. Cover with cling and leave to marinate in fridge for about 1 hour.
Place on preheated BBQ and cook for about 30-40 minutes
until the juices run pinky/beige in colour and the meat is succulent and juicy or to a minimum internal temperature of 70C.
If you don’t have a lidded barbeque cover the joint with an upturned foil container or make a ‘foil hat’ with a double layer of foil. This helps the joint to cook by both direct and indirect heat.
Serving suggestion
Apple and Mint Potato Salad: Mix together cooled boiled new potatoes with 30ml (2tbsp) prepared apple sauce, 30ml (2tbsp) mayonnaise, fresh mint, finely chopped, and seasoning. or Orange and Coriander Couscous: Place 5oz (150g) couscous in a bowl. Mix together 240ml (8floz) boiling water with zest and juice of 1 orange and 5ml (1tsp) English mustard. Pour over the couscous, cover with clingfilm and leave to soften for 10-15 minutes. Stir through 15ml (1tbsp) fresh coriander, chopped, and 2 spring onions, chopped.
